Microbes in Finished Products When plants and animals origin raw materials are to be used to manufacture foods products, it is important to ensure that the raw materials are of accepted level of bioburden and free from pathogens. As food products may also get contaminated by pathogens from human or from the environment during production, processing or preparation, it is imperative that the principles of hygiene and sanitation are practiced all the way through the manufacturing processes. Food products which are allowed to contain certain level of bioburden, should be routinely tested for total counts and specified indicator microbial contaminants such as for Shigella, Salmonella, Escherichia coli and Staphylococcus aureus Permitted level of microbial load varies with type of products and there are guidelines that can be referred to for a safe microbial level of the products.
